Rhubarb Collins Recipe
Rhubarb Collins is a summer twist on the classic drink Tom Collins. In this recipe, pink gin is used instead of old tom gin and a rhubarb syrup instead of simple syrup. This makes the drink slightly sweeter and more fruity than its original.
- 50 ml Pink Gin
- 30 ml Lemon juice
- 20 ml Rhubarb syrup
- 50 ml Club soda
- Start by making the rhubarb syrup. Instructions can be found here .
- Pour pink gin, lemon juice and rhubarb syrup into a shaker.
- Fill the shaker with ice and shake until cold.
- Strain into an ice-filled highball glass.
- Top with club soda.
- Garnish with rhubarb.
