Rhubarb Collins Recipe

Rhubarb Collins is a summer twist on the classic drink Tom Collins. In this recipe, pink gin is used instead of old tom gin and a rhubarb syrup instead of simple syrup. This makes the drink slightly sweeter and more fruity than its original.



  1. Start by making the rhubarb syrup. Instructions can be found here .
  2. Pour pink gin, lemon juice and rhubarb syrup into a shaker.
  3. Fill the shaker with ice and shake until cold.
  4. Strain into an ice-filled highball glass.
  5. Top with club soda.
  6. Garnish with rhubarb.
